Gallic Acid is a trihydroxybenzoic acid that is one of the most potent polyphenolic iron chelators. Its three adjacent hydroxyl groups form extremely stable complexes with iron, virtually eliminating non-heme iron absorption.
How to arrange timing
Separate Gallic Acid and iron supplements by at least 2 hours. Gallic acid is among the strongest polyphenolic iron chelators known.
